2012 Pumpkin Ale

I'm not exactly a pumpkin ale fan.  But I've decided to make one this year.

My main problem with pumpkin ales is that they don't ever seem to be either pumpkiny enough our spiced enough or bready enough.

So I'm going to try to resolve those issues with the following recipe:

Fermentables
6lb of 6 row malt (mash)
2lb of 20L Crystal malt (mash)
1.5lb of Wheat malt (mash)
12oz of Biscuit malt (mash)
4lb of roasted pie pumpkins (mash) (I may substitute an equal amount of canned pumpkin if fresh pumpkin is not available)
1.5lb of honey (end of boil)
Rice Hulls

Spices (added at flameout)
0.5oz Coriander
0.25oz Allspice
0.07oz Cinnamon (1tsp)
0.07oz Clove (1 tsp)
0.07oz Nutmeg (1 tsp)

Hops
1oz Crystal 60 minutes
1oz Citra 20 minutes

Yeast
Wyeast 1056 - American Ale

Step Infusion Mash
120F for 30 minutes
150F for 60 minutes
168F for 10 minutes

OG = 1.069
FG = 1.019
ABV = 6.5%
IBU = 28
Color = 16L

I'm hoping that the biscuit and wheat makes it a bit more bread.  I'm hoping that almost a full ounce of spices makes it spicy enough.  And I'm hoping that 4lb of pumpkin gives it a strongish flavor.  I'm expecting the Crystal and Citra hops to be complementary flavors that won't overpower or compete with the pumpkin or spice.
